Simple French Salad

Simple French Salad

I grew up on this salad and apparently it’s a French tradition to eat salad after dinner. I used to get sick of eating it every day as a child but my Mom would say, “When you get older you’ll miss this salad.” Needless to say, Mom, you were right. It has all the right healthy ingredients that are very beneficial to your health. Sometimes I eat it now before dinner or as lunch by itself.

Ingredients

1 tsp dijon mustard

1 tsp apple cider vinegar

~1/4 c olive oil

Fresh parsley

Salt and pepper

What To Do

Combine dijon and vinegar in measuring cup with a fork then slowly pour in olive oil whisking every few seconds until it has emulsified. Add freshly minced garlic. Drizzle some over salad, garnish with parsley, and season with salt and pepper.
