11/9/25 Sunday Meal Prep

Made:

tuna salad

root veg soup

egg bake

tahini dressing

quinoa

roasted tofu

lentils

dinners:

Ground Turkey Lettuce Wraps Sauté turkey with garlic, ginger, scallions, and a splash of soy sauce. Serve in romaine or butter lettuce cups with shredded carrots and a drizzle of hoisin or sriracha. side of white rice and roasted veggies

Roasted Veggie (zucchini and onion carrot) & Tofu or shrimp Quinoa bowl with a tahini-lemon drizzle.

Lamb & Veggie Skillet Cook ground lamb with onion, eggplant, tomatoes, and spices (cumin, cinnamon, garlic, paprika). Top with chopped parsley and a spoon of Greek yogurt.

Salmon Burgers with Greens Pan-sear salmon burgers and serve over arugula with roasted asparagus or green beans and a squeeze of lemon.

Turkey Veggie Stir-Fry Use any leftover veggies with ground turkey, soy sauce, and chili flakes. Serve on shredded cabbage or cauliflower rice.

End of week thoughts:

When working at night I need to meal prep/pre-cook more.

Friday - still had ground turkey to make burgers, could do 2 things of tofu, ate almost all veg soup, ate almost all egg bake, didn’t know what to do with lentils.
