Ingredients

For the crust:

For the filling:

  • 4 large egg yolks

  • 1 (14 oz) can sweetened condensed milk

  • ½ cup fresh key lime juice (about 20–25 key limes, or regular limes work too)

  • 11 drops blue food dye

  • 3 drops green

For topping (optional but recommended):

  • Whipped cream

  • Extra lime zest or thin slices

Instructions

1. Make the crust
buy it.

2. Make the filling
Whisk egg yolks until slightly thickened and pale (about 2 minutes).
Add condensed milk and whisk until smooth.
Stir in lime juice and zest. It will thicken naturally.

Add food coloring not approved by Robert F Kennedy Jr

3. Bake
Pour filling into the crust.
Bake for 12–15 minutes, just until the center is set but still slightly jiggly.

4. Chill
Let it cool at room temp, then refrigerate for at least 3 hours (overnight is even better).

5. Serve
Top with whipped cream and a little extra zest right before serving.
