Sweet & Spicy Cajun Nuts

Ingredients

  • 3 cups mixed raw nuts (pecans, cashews, almonds work beautifully)

  • 2 tbsp unsalted butter (or olive oil)

  • 3 tbsp brown sugar (or maple syrup for a softer glaze)

  • 1–1½ tsp Cajun seasoning

  • ½ tsp smoked paprika

  • ¼–½ tsp cayenne pepper (adjust to heat preference)

  • ½ tsp garlic powder

  • ½ tsp salt (adjust if your Cajun seasoning is salty)

  • 1 tsp vanilla extract (optional, but adds warmth)

Instructions

  1. Preheat oven to 325°F and line a baking sheet with parchment.

  2. Melt butter, then stir in brown sugar, Cajun seasoning, paprika, cayenne, garlic powder, salt, and vanilla.

  3. Add nuts and toss until evenly coated.

  4. Spread in a single layer on the baking sheet.

  5. Bake for 12–15 minutes, stirring once halfway through.

  6. Let cool completely—this is when they crisp up and the coating sets.
