Sweet & Spicy Cajun Nuts
Ingredients
3 cups mixed raw nuts (pecans, cashews, almonds work beautifully)
2 tbsp unsalted butter (or olive oil)
3 tbsp brown sugar (or maple syrup for a softer glaze)
1–1½ tsp Cajun seasoning
½ tsp smoked paprika
¼–½ tsp cayenne pepper (adjust to heat preference)
½ tsp garlic powder
½ tsp salt (adjust if your Cajun seasoning is salty)
1 tsp vanilla extract (optional, but adds warmth)
Instructions
Preheat oven to 325°F and line a baking sheet with parchment.
Melt butter, then stir in brown sugar, Cajun seasoning, paprika, cayenne, garlic powder, salt, and vanilla.
Add nuts and toss until evenly coated.
Spread in a single layer on the baking sheet.
Bake for 12–15 minutes, stirring once halfway through.
Let cool completely—this is when they crisp up and the coating sets.
